if i'm using a lower quality piece of cookware and i'm using a piece of atlantis things may take a little bit more time things don't react so incredibly quickly in a piece of atlantis so i need to be more patient but the balance to that is that things turn out so incredibly well all the time
so that's the big big advantage of why you would spend money on atlantis and on proline is that it gives you that nice buffer things happen more slowly heat kind of moves through the pan up and down at a slower rate and you don't find all of a sudden you've gone from kind of browning to burning it just doesn't happen…
