this is definitely my dream cookware set
I like the heat coverage I get. I like the heat retention in the pan. I like the triple layer of the cooking. And I just think that they look right, they feel right, the weight is right, and the cooking retention in the pan is perfect for my style.

I use mainly Hestan pans. That's the pan of choice for me. Uh, and the copper bond is the choice of the pan that I like the most.
cooking with Heston copper bond has been a dream everything cooks so evenly when I turn down the heat the pan immediately reacts
Cites acid resistance, even heating, flavour impact, heat control
also the stainless steel material allows me to cook acidic ingredients without a metallic taste
This is good for for soups. It's good for cooking whole pieces of nice chicken thighs and things like that. So, it's got nice flat area, nice wide base, good heavy weight to it, and it will retain that heat as well brilliantly.

And if speed, responsiveness, and control are important to you, the CopperBond collection is the best performer in Hestan’s lineup.
Cites heat control, heating speed
Of the eight pans I tested, Hestan CopperBond heated the fastest, followed by All-Clad Copper Core.
Cites heating speed, heating speed, heating speed
After one minute, Made In and Hestan CopperBond had the highest temperature in the center, but Hestan ProBond and Hestan ProBond TITUM heated the most evenly.
After three minutes, All-Clad Copper Core, Hestan CopperBond, and Hestan ProBond were the hottest in the center, but All-Clad D3 had the most uniform temperature.
Similar to All-Clad Copper Core, this collection is only worth it if you really value the responsiveness of copper. And the reality is, it’s not enough of a difference that the average home cook would notice.
Cites heat control (against), price (against)
This pan heats fast and evenly and has the same long handle, wide cooking surface, and flared rims as Hestan’s ProBond collection.
Cites even heating, heating speed
it is an ultra premium set priced at $1,200 but it will truly last you a lifetime
Cites durability
that means chicken Browns evenly and even the most delicate fish fillets never overcook
Cites even heating, heat control
the pans even heating and reactiveness means my homemade tortillas came out perfect
Most copper cookware won't work on induction because copper isn't ferromagnetic. But this pan has a steel base, so it does. If you love the look of copper and cook on induction, that's the real selling point.
Cites induction compatible
However some cookware collections such as All-Clad Copper Core and Hestan CopperBond use copper as the core ply because it's an even better heat conductor than aluminum.

Cites durability, price (against)
The copper is exposed on the sides, which looks great, but it tarnishes quickly and needs regular polishing to keep it looking good.
Cites appearance
The NanoBond, ProBond, and CopperBond pans are great for searing and browning, and the ProBond TITUM pan is ideal for eggs and anything prone
They're angled upward with a groove on top, a curved bottom that fits nicely in your palm, and a bump to warn you when your hand is getting too close to the pan. Rounded handles can slip and rotate when your hand is wet or you're wearing an oven mitt. And handles with a deep groove like All-Clad can dig into your hand…
Cites handle
But due to the copper, it's heavy and the exterior tarnishes.

all you have to do is rub a little bit of copper cream on the pan rinse and then buff at the microfiber towel
Cites ease of cleaning, surface finish
The copper is exposed on the sides, which looks great, but it tarnishes quickly and needs regular polishing to keep it looking good.
Cites maintenance (against)
Similarly, the copper cutout on CopperBond pans looks nice at first, but after cooking on it once, the copper tarnishes and starts to look splotchy. You can clean it with some polish, but it requires some maintenance if you want it to look like new.
Cites maintenance (against)
All that said, there’s one thing I really don’t like about these handles. And that’s this large hanging loop at the end. It’s nice to be able to hang the pan from a hook, but the hole is unnecessarily large. This big opening, combined with the thinness of the handle, makes it uncomfortable to hold at the end. There's…

Cites handle, shape and form
after weeks of use the Heston copper pot needed a good cleaning to restore its luster

The other collections are expensive too. The CopperBond pan is $420, ProBond TITUM is $270, and ProBond without the non-stick coating is $250.
Cites price (against)
The two pans with copper cooled down the fastest, but that's by design. These pans are meant to heat and cool fast to give you more control.
