All-Clad modified the handle designed slightly with the D3 Everyday collection. They made the indentation much more subtle so your hand doesn't sink in as much. You still get a safe and secure grip but the handle is more comfortable to hold.

With both collections, Demeyere welds their handles to the pan instead of attaching them with rivets, so the cooking surface is completely smooth. Rivets tend to collect grime and become discolored, so the rivetless design makes cleaning much easier.

Secondly, it makes the cookware 30 percent more efficient on induction cooktops. Induction cooktops only work with cookware that's made of magnetic materials. Steel is magnetic and since Atlantis pans have three layers of steel on the bottom, they work faster and more efficiently on induction.
Both collections retain heat well but due to its additional layers, thickness, and sheer weight, the Atlantis collection absorbs and retains heat better than Industry.
I repeated this test with several other pans and as you can see in the results Demeyere Atlantis retained heat better than every other pan after five minutes, and they tied with Made In after 10 minutes.
Atlantis cookware is more forgiving which makes it easier to cook with Because it's thicker and retains heat better, the temperature doesn't fluctuate as much while you're cooking and adding and removing ingredients. You won't burn your food if you accidentally turn the heat too high. It heats slowly and steadily.
Its thick 7-ply construction allows it to heat evenly and retain heat better than almost any other cookware.
Another downside to Demeyere’s thick construction is that it takes a while to heat up. Compared to 19 other pans, the Demeyere Atlantis took the longest to boil two cups of water.

Because of the extra layers in Atlantis pans, they are significantly thicker and heavier than Industry pans. Atlantis fry pans might be the thickest and heaviest pans I've ever reviewed. They feel more like a cast iron skillet than a stainless steel pan.

The sidewalls of the frying pans have too shallow of a slope. This design, plus the flared rims, makes it easy to slide food onto a plate but it also makes it easier to spill and splatter.

The rivets on the Made In pan I got years ago jet out further than most brands. It's hard to clean around the rivets so oil and food bits would often bake into the pan.
Still they don't offer flush rivets or rivetless options like several other brands.
If you're looking for lightweight pans, you'll be disappointed. Made In pans are built solid with thick heavy walls. The 12-inch fry pan weighs over three pounds.
I mentioned that I like the handle design but I need to call out the handle angle. Made In handles are almost even with the top of the pan. You can fit the pan in the oven with less space between racks but since the handle isn't angled upward like most, your hand is a little bit closer to the heat.
Also, there's a small space where the handle bends that's extremely difficult to clean unless you scrub it with a toothbrush.
The third feature is its brushed exterior. While I appreciate a shiny polished finish, I really like the matte look of Made In pants. They do a great job hiding fingerprints and smudges and it's a more modern look in my opinion.

Number one is the handle design. It's flat on the top and bottom so you have plenty of control when tilting but it's rounded and smooth on the sides so it's comfortable to hold.

The sidewalls of the frying pans have too shallow of a slope. This design, plus the flared rims, makes it easy to slide food onto a plate but it also makes it easier to spill and splatter.
Fortunately Made In made some updates and the rivets on the pans made today are much flatter.
I mentioned that I like the handle design but I need to call out the handle angle. Made In handles are almost even with the top of the pan. You can fit the pan in the oven with less space between racks but since the handle isn't angled upward like most, your hand is a little bit closer to the heat.
It heats fast and evenly and once it's hot it maintains a consistent temperature.

As the water heated up, tiny bubbles were uniform across the entire cooking surface, which indicates even heat distribution.
I've run this test with 20 other brands and Made In was the second fastest to boil the water, which is a good thing, but surprising considering the pan is relatively thick.
As you can see in the chart, Made In had the highest water temperature after 10 minutes.
The last feature I'll highlight is the large cooking surface. The diameter of the 12-inch fry pan's cooking surface is 9.5 inches. Most 12-inch pans are closer to 9 inches, so you get a little more flat space to cook.

I repeated this test on the bottom of the pan, and the results were the same - The ProBond scratch was significant, and the NanoBond scratch was noticeable but not as deep.
After one minute, Made In and Hestan CopperBond had the highest temperature in the center, but Hestan ProBond and Hestan ProBond TITUM heated the most evenly. With the two ProBond pans, the temperature of the outer edge and walls was the closest to the temperature at the center.

It's the second thickest fully clad pan I tested and the fourth heaviest overall. It sits perfectly flat on the cooktop and has excellent heat retention.
Most stainless steel pans leave the aluminum core exposed around the edge and over time that aluminum can recede causing the steel layers to become sharp or even separate. This pan has sealed rims which eliminate that risk entirely.
My one complaint is the handle. It's the second shortest of any pan I tested and I don't love the rubber grip on the underside.

But the bigger issue is that it gets unusually hot. Most stainless steel pan handles only get hot in the first inch or two near the pan. But on this one, the heat travels up much further.
