so as you spend more money on cookware stainless or cast iron the quality difference on how they cook starts to narrow to a point where these two pans that are two of the best quality pans in the world cook very very similarly they do a lot of the same sort of thing

so the proline and the atlantis cookware from demeyer is my absolute favorite stainless steel cookware in the world and i'm going to tell you why

so proline is the frying pan line of the highest n line of cookware from de meyer it is a seven layer cookware which starts getting into like the upper upper end of all stainless steel cookware
they are expensive, right? Especially if you live outside the EU. For example, the price here in New Zealand just for this 24 cm is over $500, right? And that's quite frankly ludicrous.

with that 20 20 cm model, you are really not getting any value for your money, so I would stay away from that one.
I will say that the quality of these pans, the quality of the metal of these pans, are obviously very high. You can just tell by looking at them and feeling them.

so it starts to and actually really does behave more like cast iron than regular stainless steel that you're used to so using a proline pan will give you a lot of the same results of using cast iron which is extraordinary

so that's the big big advantage of why you would spend money on atlantis and on proline is that it gives you that nice buffer things happen more slowly heat kind of moves through the pan up and down at a slower rate and you don't find all of a sudden you've gone from kind of browning to burning it just doesn't happen…
the 20 cm Proline is built different, okay? So, the 24, 28, and 32 cm Proline are 4.8 mm thick, and that's why you want to buy Proline, right? That's the whole reason that you're buying a Proline. But the 20 cm Proline is only 3 mm thick, okay? So, it's basically like a Industry or Multiline with an with a Proline…

a 20 cm pan is just too small, right? It's too small to really be useful. It's barely enough to fry one egg or maybe a couple of sausages or a small piece of meat, and that's pretty much it.

the bottom diameter of this pan is approximately 26 cm, so that's very large. And that's too big for most ceramic and induction flat tops.

so it's really important before you buy a skillet from proline that you would try it feel it get it in your hand make sure if you buy from somebody online that you have a return policy that's really easy to deal with
so people that find cast iron is problematic for whatever reason they don't like candles they think it's dirty whatever you get the high end result of high-end cast iron from a stainless steel pan which is amazing

right here i have a demeyer pro line and this is from what they call the atlantis series this is a seven layer aluminum aluminum alloy stainless steel inside mount pan it is extraordinarily heavy for a stainless steel pan

these pans are not a whole lot different in weight this is a larger pan of course so it feels a little bit heavier but the weight quality of these are very very very similar
you may want something that responds faster to heat changes, okay? Because these are so thick and so heavy, they will respond slower than a pan that's built thinner and lighter.

uh it's definitely a lot heavier than like a 5-ply or a 3-ply from a brand that everyone know called like all clad um it's it's a weighty cookware
