good things happen to the bottom there definitely so that's looking awesome definitely took a chunk off on the inside definitely lots and lots coming off so it's feeling smooth
Cites ease of cleaning
what's really interesting this here is caked on it's it's hard but it's not damaged I don't think I don't think it's damaged the enamel uh so I really just think it's a ton of of carbon buildup over generations of using it
Cites coating durability, durability, lid
the lid that is in good shape it had a little bit uh on the top of the lid but the bottom of the lid but the top is in great shape
this pan will now go on for another generation or two or three there's no reason for this not to go on uh indefinitely uh it is a perfectly usable pan
I went to the mis website, created an absolutely truthful twostar review. I posted the review and I waited and I waited and I waited and I'm still waiting. That review didn't show up.
So, I made a five-star review. Five stars box out of the the pen out of the box was excellent. That review got posted instantaneously.
they are absolutely 100% throttling this message. They are keeping the negative reviews from being visible and they are only posting high reviews, fives, and they have their token threes and twos and ones here.
so as you spend more money on cookware stainless or cast iron the quality difference on how they cook starts to narrow to a point where these two pans that are two of the best quality pans in the world cook very very similarly they do a lot of the same sort of thing
Two judgements rest on this sentence:
but wherever you are in the world search it out get your hands on it try it out you know invest in one piece and i know you will not have any regrets

Jed works for this brand. Stated in the source: “i sell atlantis from proline because i believe it's the best quality cookware so you know if you buy from me wonderful thank you i appreciate that” Kept and labelled rather than dropped: a paid endorsement is still evidence, and you should be the one to decide what it is worth.
this stainless steel disc is two millimeters of copper that is sandwiched by silver so silver and copper in the center of this aluminum disk the conductivity to this is unparalleled it's ridiculous
Cites base and rim, build quality, heat conduction, heat control, heating speed

this is two separate pieces that are bonded together that have the base and the upper shell and the marriage here is absolutely perfect
so using the cookware makes you a better cook so that's a big bold claim for me to to make but it just does
so that's the big big advantage of why you would spend money on atlantis and on proline is that it gives you that nice buffer things happen more slowly heat kind of moves through the pan up and down at a slower rate and you don't find all of a sudden you've gone from kind of browning to burning it just doesn't happen…
so the proline and the atlantis cookware from demeyer is my absolute favorite stainless steel cookware in the world and i'm going to tell you why

the atlantis line is totally different in the way that it's made and it's extraordinary so it doesn't really compare to anything else on the market
when you're climbing the quality ladder in stainless steel and you get to the top of the top when it comes to the atlantis cookware with the copper and the silver nothing else can compare to the results that you're gonna get
so proline is the frying pan line of the highest n line of cookware from de meyer it is a seven layer cookware which starts getting into like the upper upper end of all stainless steel cookware
Your pan is not a non-stick pan. This is just a standard everyday carbon steel pan with nitrating, and that's all that it ever should have been marketed as. There is nothing about this pan that is different from anything else.
Cites non-stick surface (against)
Like, it's something you'd probably pick up at the hardware store that usually comes with like a Teflon coating that you would spend maybe $19 or $15 or on sale for $9.99. Like it's a pretty garbagey little pan. It works fine, but it's nothing special.
Cites build quality (against), price (against)
But now quite quickly into using this pan and I've used it dozens and dozens of times. It should be building some sort of a seasoning. I'm not getting the the results that I kind of expected that I would feel I was sold by Misan.
Cites non-stick surface (against), build quality (against), non-stick surface (against), weight (against)
this is a very, very lightweight, short little stubby handle, fairly cheaplymade, kind of crappy Chinese pan
Fairly quickly, I was getting less than excellent results. I was doing everything that I thought that I should. I was following the recommended seasoning process or maintenance process from Misan, but my eggs were sticking much more than I expected they would.
Cites non-stick surface (against)
Using the pan, I found butter worked better than oil, but oil is my preference. On all of my other carbon steel cookware, I use, you know, either a very thin olive oil or a grape seed oil to cook with, and my results are excellent
if you're looking to buy like a piece of lodge it's hard to find a equivalent stainless steel pan that's going to give you the same quality of results as a lodge pan
Cites price
however if you're looking for price conscious cookware cast iron from a performance base is going to do better for you
Cites price
you start to get so much density and thickness and weight in your stainless steel cookware that is to mimic the way in which a good cast iron pan is going to work
Cites even heating, heat control, heat retention, learning curve, non-stick surface, searing and crust, weight
but what happens with stainless is that as they get better and better they start to behave a little bit more like cast iron they hold their heat incredibly well and they distribute their heat incredibly well
i can season of course in my cast iron pan where if i cook at the right temperature in my stainless steel and i use a lead enforced effect where i'm finding just the right sweet spot i can cook with a little bit of oil and things basically become nonstick
so using the cast iron pan being well seasoned it's more forgiving you can have it really well seasoned if it's a little cooler a little hotter a little variable in heat then it seems to allow you to have things that don't stick
the beauty with high-end stainless steel is the variability is wider so you have a bigger window of it being more of a perfect temperature within a high-end stainless steel aluminum core pan than you do in a cheat pan
it definitely can brown a little bit better over time things cook a little bit more thoroughly in cast iron somewhat when it comes to high-end cookware not not a massive difference
so it starts to and actually really does behave more like cast iron than regular stainless steel that you're used to so using a proline pan will give you a lot of the same results of using cast iron which is extraordinary
Cites heat control

they also focus intensively on making cookware that doesn't have riveted handles and their handles the way they're applied to the pots are absolutely amazing

so the my all de meyer cookware works very very well on induction and arguably better than anything else for induction

they just continued letting the demire family run the company and make extraordinarily high quality cookware

de meyer is so incredibly good in general because it anything that works well on induction is still going to work well on gas and the conductivity to it is is tremendous
they basically told me that I didn't understand what I was doing and that I should just season it more and it needs more seasoning. really kind of being counter to what this pan was sold to me as
Cites non-stick surface (against)
but it is old and it's really unique and I think to this family that this was the grandmother's pan this has sentimental value so very very much worthwhile redoing this pan
Cites repairability
the beauty of all cast iron enameled or not is that it will last for Generations
Cites durability
so if you love perfectly clean cookware and you want to keep it clean i would suggest to go with stainless
Cites ease of cleaning
if you love the idea of using cast iron and the the heritage that comes with that then that is more of a choice and that's you know from the the hundreds of pans that i sell every year that is a choice that people are making
we're stainless it's an easy cleanup you don't have to worry about seasoning it you can use something like barkeeper's friend or bonami or comet on it to clean it and make it all perfectly shiny if you've got any oil that's built up on it
Cites ease of cleaning, maintenance
but the performance is going to be non-comparable between a a cheap stainless steel aluminum-based pan compared to your 40 large pan
Cites build quality (against), heat conduction (against), heat control (against), learning curve (against), non-stick surface (against)
if you do that with stainless things stick if it's too hot too cold you have problems you just gotta find that right temperature
a really thin cheap aluminum core stainless steel pan it's kind of sweet spot to cooking is very very small
buying really lightweight aluminum non-stick pans it's really hard to get quality results lighter lightweight in non-stick aluminum based is just a bit of a problem to really get great results
Cites heat retention (against), weight (against)
you know you use a piece of lodge or you know you can go up the quality ladder from lodge and you're going to get excellent results
i love to suggest cast iron to people on stovetop you know versus something like proline because the reality is you can go down to the hardware store and buy a piece of lodge cookware for 40 bucks compared to a you know 270 dollar or more stainless steel pan and the results are amazing
Two judgements rest on this sentence:
the better the quality the cookware generally like as you're buying a better quality brand that then it's heavier and is better at distributing holding a distributing weight the lower the heat and the more penetrating over a bit of time that heat can be so you get better more even results all the time using higher end…
Cites even heating, heat control, weight
but the heat retention and the distribution like when you've heated up a nice big piece of cast and you've got that constant heat under it it just distributes so incredibly well and it allows for the flexibility of cooking
Cites even heating, heat retention, versatility
the the weight of the thinness of the top of this is perfect because you don't need to be adding extra weight adding thickness to the wall of a piece of atlantis wouldn't benefit you except added weight which is just a negative at this point
Cites weight

it's it's wonderfully heavy for people that don't love heavy cookware it could be a bit of a problem

so it's really important before you buy a skillet from proline that you would try it feel it get it in your hand make sure if you buy from somebody online that you have a return policy that's really easy to deal with
so people that find cast iron is problematic for whatever reason they don't like candles they think it's dirty whatever you get the high end result of high-end cast iron from a stainless steel pan which is amazing
Cites maintenance

Lucas has a white internal oven so and all of their pieces mostly some of them aren't but most of them are so the staining is something that happens and it it's really hard to get some of that staining off

I'm I'm not really optimistic I don't think this is going to do much I've dealt with this kind of really really heavily built on carbon before and all of these moves are kind of a waste of time
Cites ease of cleaning (against)
okay so that did very little very little and I could have kept going and going and going and I was going to get a tiny little bit off but uh that's been on there for a long long long time
Cites ease of cleaning (against)
a lie bath I haven't had this yet but I've been cautioned many times that lie can damage the color on the exterior so this being a vintage piece I really want to be cautious with this so I'm kind of leaving that as my last resort
Cites coating durability (against)
are we paying more for something a little bit hyped up with five ply that was the same in quality but less money and less hype 25 years ago so this I think has been an interesting comparison I wanted to know and I think these guys are really the same a 25-year-old D3 is really the same to me as a brand new D5
Cites price (against)
so then in the mid 2000s maybe the late 2000s D5 was introduced on the market and it was a Smash Hit so the original triclad or what we now called D3 started to collect dust on the shelves and D5 was all that we sold it was sold in two different finishes in a stainless brushed and stainless polished and both of them…
Cites reputation
The out of the box experience with the nitrided surface was excellent, and the results didn't disappoint.
Cites non-stick surface
and i want to take it and put it outside on the campfire once in a while i want to take it camping with me that's the the allure and the love of using cast iron
Cites durability, heat resistance
and as you go up in quality as you start to spend more money the cast iron pans get better in the way in which they're finished and their design
Cites shape and form, surface finish
so what the variables are then is maintenance so looking after a lodge pan for say 40 canadian comparatively to a 40 stainless steel pan is it's going to take more maintenance and more effort to look after your lodgepan
Cites maintenance (against)
so what i would say to somebody that's looking for something of a very very high quality is that there's smaller amount of difference between the quality of the high end of aluminum core stainless steel cookware to a high-end cast iron pan
Cites build quality
right here i have a demeyer pro line and this is from what they call the atlantis series this is a seven layer aluminum aluminum alloy stainless steel inside mount pan it is extraordinarily heavy for a stainless steel pan
Cites build quality, weight
these pans are not a whole lot different in weight this is a larger pan of course so it feels a little bit heavier but the weight quality of these are very very very similar
if you know your budget only allows to a certain extent focus on weighty cookware so atlantis and proline are weighty cookware but it's not the only you know heavyweight cookware out there
Cites weight
this customer had this oven this this really cool kind of late' 60s early' 7s oven uh Luc oven this beautiful unique teal color
Cites appearance
I didn't want to damage the exterior which is I think a beautiful color for being 50 years old
so it's character marks on the bottom uh along the edge I'll show you here a closeup here there are a bunch of character marks all around this pan so it's been well used and well loved
you know the two eggs turned out to be pretty much identical the cook time was identical the heat was identical
Cites heating speed
so my original all clad pen weighs 982 G my D5 pan weighs 1 ,1 144 G and a new D3 10in pan like today's pan that you go to the store and buy is 6 and 80 g so my old triclad pen that I have 25 years old is 30% heavier than a new one so my D5 pan is 14% heavier than my old triclad and 45% heavier than a new triclad pan
Cites build quality (against), weight (against)
there is a point in time where we do want a pan to be hyperconductive and we do want the pan heat to move through it quickly and that is one of the reasons that we use stainless steel aluminum based cookware we want it to be more reactive and do things exactly as you want
Cites heat conduction
But Misan does offer their money back within 60 days. If you feel that somehow this isn't the pan that you were sold and you want your money back, reach out to them.
For all of you that have bought one of these pans, if you're happy with it, that's fantastic. This pan could work great. Seasoned well, it's going to go on forever. It's pretty lowquality pan for what you paid.
Cites non-stick surface, price (against)
field is is no well known for being a light to quality cast iron pan
Cites reputation, weight
if i'm using a lower quality piece of cookware and i'm using a piece of atlantis things may take a little bit more time things don't react so incredibly quickly in a piece of atlantis so i need to be more patient but the balance to that is that things turn out so incredibly well all the time
Cites heat control (against)

Misan says that they use a corn oil finish on their pan to protect it in chipping. That's very standard for a lot of carbon steel pans. But if this is a nitrated pan, why add anything to the pan before you send it off?
everything down and does it work it does technically work does it work as well as some people want it to work or they hoped it work that was really from each user was telling me different things back then people loved it some people just felt eh it doesn't really do much more and they spent more money on it
Cites price (against)
so my old triclad pen that I have 25 years old is 30% heavier than a new one
Owned 25 years
and not to be this big lumbering Beast of slowly heating up and slowly cooling down like our friend cast ir
Cites heating speed (against)
evenly and that was mixed re views it some people really liked it some people definitely like they added weight they felt that it was better quality but really from a performance standpoint between the old one to the to the new one at the time of introduction this was back in the kind of mid late 2000s uh it was kind…
Cites weight
so in the old days there wasn't any complaints about the tri clad it wasn't that there was a problem with triclad and that all clad introduced F5 ply to solve a problem they well they did solve a problem but it was their own problem this wasn't a consumer problem
so cast doesn't absorb energy as quickly as atlantis atlantis really is amazing how fast
Cites heating speed (against)
uh it's definitely a lot heavier than like a 5-ply or a 3-ply from a brand that everyone know called like all clad um it's it's a weighty cookware

so using the oven cleaner was the win I think that I softened it all up with the previous attempts with using the vinegar solution and with barkeeper so it would have helped somewhat but the oven cleaner was a real win putting into the oven uh I put it in for an hour and that seemed to definitely help get that last…
Two judgements rest on this sentence:
and it was her grandmother's it's been used a lot as you can see
and a little bit less on the new pan

know and relatively you know non-stick here I would say little bit less so on my yeah little bit more of sticking on my old pan
Cites non-stick surface (against)
I came across this beauty that I've had for a long time like one of my original cookware pieces that I still have before this it would have been something a lot lighter and cheaper but uh I've had this pan for a long long time
it made this cookware demire and atlantis and the pro line made it more accessible to everybody so it should be relatively easy wherever you are to get your hands on this
