really really good pans as I've said many times before. I still really enjoy using them even at almost 5 years.

this stainless steel disc is two millimeters of copper that is sandwiched by silver so silver and copper in the center of this aluminum disk the conductivity to this is unparalleled it's ridiculous

Cites base and rim, build quality, heat conduction, heat control, heating speed
this is two separate pieces that are bonded together that have the base and the upper shell and the marriage here is absolutely perfect
so cast doesn't absorb energy as quickly as atlantis atlantis really is amazing how fast
so using the cookware makes you a better cook so that's a big bold claim for me to to make but it just does
if i'm using a lower quality piece of cookware and i'm using a piece of atlantis things may take a little bit more time things don't react so incredibly quickly in a piece of atlantis so i need to be more patient but the balance to that is that things turn out so incredibly well all the time
so that's the big big advantage of why you would spend money on atlantis and on proline is that it gives you that nice buffer things happen more slowly heat kind of moves through the pan up and down at a slower rate and you don't find all of a sudden you've gone from kind of browning to burning it just doesn't happen…
so the proline and the atlantis cookware from demeyer is my absolute favorite stainless steel cookware in the world and i'm going to tell you why

Cites build quality, heat conduction
the atlantis line is totally different in the way that it's made and it's extraordinary so it doesn't really compare to anything else on the market
when you're climbing the quality ladder in stainless steel and you get to the top of the top when it comes to the atlantis cookware with the copper and the silver nothing else can compare to the results that you're gonna get
Demeyere Atlantis is the best of the best. Each piece is carefully crafted with the highest quality materials and a thoughtful design process.

Cites build quality
After the water boiled, I took each pan off the heat and measured the water temperature after 10 minutes. Demeyere Atlantis retained the most heat, again thanks to its super thick construction.
Cites heat retention
To get a second read on heat retention, I heated each pan until the center reached 400 degrees Fahrenheit. Then, I quickly removed it from the heat and measured the temperature in the center of the pan after 5 and 10 minutes. While the All-Clad, Made In, and Hestan pans performed similarly, the Demeyere Atlantis pan…
Pans in the Atlantis collection have a 3-layer steel bottom that they call TriplInduct. Since steel is magnetic and ultra-durable, having three layers of steel at the bottom of each pan provides better efficiency on induction cooktops and ensures the cookware will never warp.

Cites warp resistance
Out of 19 pans, Demeyere Atlantis had the highest water temperature after 5 minutes and tied for highest after 10 minutes.

Cites heat retention
I will say that the quality of these pans, the quality of the metal of these pans, are obviously very high. You can just tell by looking at them and feeling them.
Cites build quality, durability
really really good pans as I've said many times before. I still really enjoy using them even at almost 5 years.
With both collections, Demeyere welds their handles to the pan instead of attaching them with rivets, so the cooking surface is completely smooth. Rivets tend to collect grime and become discolored, so the rivetless design makes cleaning much easier.

Cites ease of cleaning, even heating, handle, heat control, heat retention, induction compatible, speed and efficiency
Secondly, it makes the cookware 30 percent more efficient on induction cooktops. Induction cooktops only work with cookware that's made of magnetic materials. Steel is magnetic and since Atlantis pans have three layers of steel on the bottom, they work faster and more efficiently on induction.
Both collections retain heat well but due to its additional layers, thickness, and sheer weight, the Atlantis collection absorbs and retains heat better than Industry.
I repeated this test with several other pans and as you can see in the results Demeyere Atlantis retained heat better than every other pan after five minutes, and they tied with Made In after 10 minutes.
Atlantis cookware is more forgiving which makes it easier to cook with Because it's thicker and retains heat better, the temperature doesn't fluctuate as much while you're cooking and adding and removing ingredients. You won't burn your food if you accidentally turn the heat too high. It heats slowly and steadily.
Its thick 7-ply construction allows it to heat evenly and retain heat better than almost any other cookware.
Another downside to Demeyere’s thick construction is that it takes a while to heat up. Compared to 19 other pans, the Demeyere Atlantis took the longest to boil two cups of water.

Cites heating speed (against)
It's also the best performer on induction cooktops. It heats evenly with no warping or buzzing.
Cites even heating, induction compatible
I mentioned that there are three stainless steel cookware brands that I recommend if money is not a factor. And the first one is Demeyere Atlantis.
a couple more reasons not to buy these Atlantis pots. So, the first two reasons are the same, so they are thick and they are sorry, they are heavy, and they are expensive. So, those are valid reasons to not buy these pots.
Cites price (against)
for these type of pots, most of the time you don't need something this expensive and this premium, right? So, if all you're going to do is to do things like making stock, soup, boiling pasta, boiling cooking a bit of oatmeal, boiling some eggs, you can get a cheap IKEA pot, and it'll do the job just fine
a couple more reasons not to buy these Atlantis pots. So, the first two reasons are the same, so they are thick and they are sorry, they are heavy, and they are expensive. So, those are valid reasons to not buy these pots.
Cites weight (against)
the the weight of the thinness of the top of this is perfect because you don't need to be adding extra weight adding thickness to the wall of a piece of atlantis wouldn't benefit you except added weight which is just a negative at this point

Cites weight
If it's within your budget and you have the strength and willingness to handle heavier cookware, go with Atlantis.

Because of the extra layers in Atlantis pans, they are significantly thicker and heavier than Industry pans. Atlantis fry pans might be the thickest and heaviest pans I've ever reviewed. They feel more like a cast iron skillet than a stainless steel pan.

After about 3 months of using the Demeyere Atlantis pan, I noticed the handle was loose. As I examined what was going on, I lifted the pan and the handle completely snapped off. I was honestly shocked this happened, especially given how expensive these pans are. I was also very lucky it didn't break while I was…

Owned 3 months , no longer
Cites handle (against)
This is the thickest fully clad frying pan I tested at 5.5 mm. Because of that, it heats slowly but retains heat better than nearly every other pan.
Cites heat retention, heating speed (against)
let's just take a brief moment to appreciate how shiny these pans still are. I did give them a clean with Bar Keepers Friend a couple of days ago. Um so, that's why they look nice and shiny. And the thing about these pans is that if you clean them regularly with something like Bar Keepers Friend, they will always look…
Cites appearance, maintenance
Atlantis is Demeyere's most premium cookware collection and it's priced accordingly. The cost varies by piece and where you buy, but prices for Atlantis cookware typically range between 30 and 50 percent more expensive than Industry.

Cites price (against)
That said, both collections are expensive their prices are comparable to brands like All-Clad, Hestan, and Le Creuset.
Both Atlantis and Industry pots and pans have flared rims that make pouring liquids and transferring food to plates easy.

Cites base and rim, handle, heat resistance
Both collections have Y-shaped handles that stay cool while you're cooking on the stove, but the actual shape and the finish is different.
The handles on the Atlantis collection are angled higher which keeps your hand further away from the heat and also makes it a little easier to tip and rotate the pan.
Both collections are made with an 18/10 stainless steel cooking surface. This type of steel contains 18% chromium and 10% nickel, which gives it its shine and makes it extremely resistant to staining, rust, and corrosion.

Cites build quality, rust resistance, warp resistance, warranty
Both collections come with a 30-year warranty covering defects in materials and craftsmanship.
I mentioned briefly that cookware in the Atlantis collection has a three-layer bottom. Demeyer calls this TriplInduc. It's only available with the Atlantis collection and it provides two benefits. First, it makes the cookware more durable and ensures that it will stay perfectly flat and never warp.
Lastly, pans in the Atlantis and Industry collections are rivetless, which means the cooking surface is uninterrupted and easy to clean. Instead of rivets, the handles are welded to the sides. Rivets collect grease and are difficult to keep clean over time, so this is a major benefit.

Cites induction compatible
if you want to do something a bit more complex like stews and braises, where you got to sear stuff or saute on the bottom, it could be worth it to get that better heat control and heat retention.
Cites heat control, heat retention
I'm going to do a long-term 4 and 1/2 year review, in fact, almost 5 years review of these Demeyere Proline and Atlantis pans.
Owned 4 years
I'm specifically looking at U Atlantis uh and I don't think that you know it is the cheap version
Cites build quality

Demeyere applies a unique electrochemical surface treatment called Silvinox to the cookware in both collections. This treatment removes iron and impurities from the steel surface resulting in a brilliant shine that won't discolor, smudge, or show fingerprints. It keeps the cookware looking new even after using it for…

The handles on the Atlantis collection are angled higher which keeps your hand further away from the heat and also makes it a little easier to tip and rotate the pan. They also have rounded edges and a shiny polished finish.
Demeyere Atlantis was the slowest to heat, which was also expected because it's the thickest pan at 5.5
Cites heating speed (against)
To make this real, The Demeyere Atlantis 11-inch fry pan weighs 5.2 pounds while similar pans from All-Clad and Made In weigh around 3 pounds.

As you can see, it’s attached by these four little pegs and it’s not welded on completely like you would think. Although this isn't a common issue, I did find a few other customers complaining about this happening - so it’s not a complete fluke.
