Demeyere Proline
you know Demeyer industry and Demeyer Proline specifically um you know it has met our expectations over and over and over and over again it's it's such high quality cookware that you know when people send us cookware for testing that's our Benchmark so we're like okay well if it cost X and it does why then you know it…
Cites build quality
honestly they all they're all great pants they all did a great job for me the the Far and Away lead is this guy um but for just a small eight inch pan I'm pretty pretty happy with this one too
so in summary like i said in the beginning of at the beginning of the video my choice very clearly without a doubt the prolonged seven okay and that's and that's also because i like heavy pants i don't mind it
Cites weight
but um but what would i personally recommend um if you really don't want the 30 big heavy proline seven my first choice my first alternative would actually be the 28 centimeter per line set okay
so as you spend more money on cookware stainless or cast iron the quality difference on how they cook starts to narrow to a point where these two pans that are two of the best quality pans in the world cook very very similarly they do a lot of the same sort of thing
really really good pans as I've said many times before. I still really enjoy using them even at almost 5 years.
but wherever you are in the world search it out get your hands on it try it out you know invest in one piece and i know you will not have any regrets

so the proline and the atlantis cookware from demeyer is my absolute favorite stainless steel cookware in the world and i'm going to tell you why

so proline is the frying pan line of the highest n line of cookware from de meyer it is a seven layer cookware which starts getting into like the upper upper end of all stainless steel cookware
but that being said though like it is a great pan is if it was my money and you could go for either this guy or this guy and they're sorry talking about the Atlantis Pro Line the Atlantis pro line or the Heston nanobond yeah um what we were talking about they're pretty comparative in price um both made in Europe both…

that's our All-Clad that's our denier you can see this stuff just comes right off as well nothing
Cites even heating, heat conduction, heat retention, non-stick surface
but once it's there it sits yeah beautifully because it behaves a lot more cast iron yeah what we were just talking about like in terms of like the weight it's it almost has like the same thermal conductivity like if you're doing a lot of heavy searing as a as a cast iron
and again you can see the most even cooking for sure is off this guy here just the way they're more evenly colored they've cooked down nicely
here's our demire Proline seven layer I would say it's a little bit easier to see here but those are probably the most evenly cooked they're translucent all the way through similar brownness across all surfaces versus just on edges
so if you like a thicker heavier stainless steel Skillet one with a lot of thermal mass that produces delicious food and you don't mind getting out your wallet this de Meyer Proline Atlantis is a fantastic choice

the thickness of this is 4.8 millimeters which is extremely thick um and again you i i don't know if there's another stainless skillet or frying pan that's as thick as this i may be wrong but you'll be it'll be hard to find one that's this thick
Cites build quality
they are expensive, right? Especially if you live outside the EU. For example, the price here in New Zealand just for this 24 cm is over $500, right? And that's quite frankly ludicrous.
Cites price (against)
with that 20 20 cm model, you are really not getting any value for your money, so I would stay away from that one.
I will say that the quality of these pans, the quality of the metal of these pans, are obviously very high. You can just tell by looking at them and feeling them.
Cites build quality, durability
so it starts to and actually really does behave more like cast iron than regular stainless steel that you're used to so using a proline pan will give you a lot of the same results of using cast iron which is extraordinary
Cites heat control

so that's the big big advantage of why you would spend money on atlantis and on proline is that it gives you that nice buffer things happen more slowly heat kind of moves through the pan up and down at a slower rate and you don't find all of a sudden you've gone from kind of browning to burning it just doesn't happen…
it is you know the capacity in terms of the searing is much much higher with a prolong okay and i would even say it's disproportional um when you consider the 30 percent temperature sorry when you consider the 30 percent weight difference okay it seems that this perline can handle much much more in you know relative…
Cites heat retention, size and capacity
in the last video i i said that um even with a 28 centimeter model pro line i was able to beautifully seal ten chicken drumsticks and that's a pretty heavy load you know 10 chicken drumsticks that's what is a kilogram or maybe even more medium sized chicken drumsticks
so in that sense the pro line for me is also an easier pen it's a more friendly pen to use because it gives you a larger margin for error and that was you know in my cooking test and that was very easy to see
this is 2.4 kilograms so the 28 centimeter model of the problem 7 is still heavier than the 32 centimeter version of the industry 5. okay and this is able to give you that really beautiful sear it's able to take a much higher load compared to this 32 centimeter industry 5.
i didn't see that on myself with this pen with this proline 7 the bass remains perfectly flat okay with this pan even while medium heat
Cites base and rim, searing and crust
with the pro line the pan was able to maintain a very nice serious sizzling sound you know this maintaining the seer uh continuously throughout from start to finish
the demire on the high temp sear test on the flat top it did not warp we got that fan screaming hot smoking and it didn't warp so I really do like that it has a lot of thermal Mass
Cites warp resistance

for the anti-ribitous around here people who don't like rivets on frying pans probably like this one the handle and the helper handle are welded so no rivets on the inside

I want to show that the pan can hold eight yes eight boneless pork chops at once without any crowding eight pork chops in one pan one reason it's taking me so long to do this review is I don't often need to use a pan that's this big but when we have people coming over for Sunday dinner family coming over you need to…
holds two ribeye steaks that's how big it is and there's still plenty of room in the pan
but I think the stainless steel here if you need one pan that does everything it did a more than adequate really good job on those steaks
this one the proline seven two point seven four kilograms very very heavy okay um you yeah you normally don't find a stainless steel skillet this heavy okay this is really very heavy which i like which is an advantage to me may be a detriment to some other people
Cites weight
and it's not also not the whitest between somewhere in between this is 2.4 okay so it is heavier than the 1.9 but it's lighter than the 2.7 so this could be a good compromise
the 20 cm Proline is built different, okay? So, the 24, 28, and 32 cm Proline are 4.8 mm thick, and that's why you want to buy Proline, right? That's the whole reason that you're buying a Proline. But the 20 cm Proline is only 3 mm thick, okay? So, it's basically like a Industry or Multiline with an with a Proline…
Cites build quality (against)
a 20 cm pan is just too small, right? It's too small to really be useful. It's barely enough to fry one egg or maybe a couple of sausages or a small piece of meat, and that's pretty much it.
Cites size and capacity (against), stovetop compatibility (against)
Firstly, ask yourself, do you really need something that big? Personally, I do not.
the bottom diameter of this pan is approximately 26 cm, so that's very large. And that's too big for most ceramic and induction flat tops.
let's quickly go through the three reasons why you should not buy the Proline, and which I've talked about before.
I don't recommend this one because first of all, a 20 cm pan is just too small, right?
it's it's wonderfully heavy for people that don't love heavy cookware it could be a bit of a problem

so it's really important before you buy a skillet from proline that you would try it feel it get it in your hand make sure if you buy from somebody online that you have a return policy that's really easy to deal with
so people that find cast iron is problematic for whatever reason they don't like candles they think it's dirty whatever you get the high end result of high-end cast iron from a stainless steel pan which is amazing

cooking here in the demire produced an absolutely fantastic centerpiece for this delicious meal
there's a lot of steam and bubbling in this ground beef and I can drag a spatula through here and nothing is sticking once that moisture evaporates and steams away then we get some sizzling and crackling and Browning I thought the the Meijer did a nice job here
it looks like the pan is very even and perhaps more even than my cooktop
it's a thick heavy pan you can kind of maintain a sear when it comes to searing a steak
if you have any trouble with the weight of pans you will probably actually not like this to Meijer it is significantly heavier and more difficult to move around than other pans even with that helper handle which is absolutely necessary so this is not a pan you want to use to move or flip food

on the demire my thumb is out here and even though this pan is a pound lighter it is significantly more difficult to move around now I am obviously very strong and powerful but I gotta say this pan is kind of tough to move it definitely needs the helper handle and I've noticed when I cook picking it up and trying to…

it's actually very difficult to lift this pan
the handle on the pro line both the main handle and the helper handle the finish is nicer it's polished and smooth and this one has a rougher texture
Cites surface finish
right here i have a demeyer pro line and this is from what they call the atlantis series this is a seven layer aluminum aluminum alloy stainless steel inside mount pan it is extraordinarily heavy for a stainless steel pan
Cites build quality, weight
these pans are not a whole lot different in weight this is a larger pan of course so it feels a little bit heavier but the weight quality of these are very very very similar
you may want something that responds faster to heat changes, okay? Because these are so thick and so heavy, they will respond slower than a pan that's built thinner and lighter.
Cites heat control (against)
The first of all is they are too heavy, okay? So, if they're too heavy, then you're not going to use them.
Cites weight (against)
personally, I think the concern with the handle is not really a valid reason to not buy these pans. That's only because the possibility of these handles falling off is really no higher than the possibility of any high-quality product being faulty, right?
Cites handle
let's just take a brief moment to appreciate how shiny these pans still are. I did give them a clean with Bar Keepers Friend a couple of days ago. Um so, that's why they look nice and shiny. And the thing about these pans is that if you clean them regularly with something like Bar Keepers Friend, they will always look…
Cites appearance, maintenance
I really like the handle particularly on the pr line
Cites handle
the proline pen is always a little bit more difficult to get there because it takes so long to preheat the seven layers of the proline is just just a little bit more finicky when it comes to it
Cites heating speed (against)
I noticed that when I heat this thing up on the stove top usually takes at least a minute longer than other pans that I'm used to usually somewhere around three minutes or so sometimes up to four minutes depending on which cooktop I'm using

because this pan is so thick and heavy it may not be quite as responsive as a little bit thinner pan and it may have taken a little bit longer for that change to take effect so I was cooking up around six or seven went back down to six or five and then I went down to four so a full three notches and these were still…
one of these high temperature tests I still prefer a good cast iron or a carbon steel for that task
neither handle for me and this is one slight dislike about these pants is neither handle for me gives me a very secure grip i just find them a bit too a bit too slippery and a bit too narrow
Cites handle (against)
these pieces are worth buying. I think they are worth buying. They are very use- useful pieces, but buy with caution.
I'm going to do a long-term 4 and 1/2 year review, in fact, almost 5 years review of these Demeyere Proline and Atlantis pans.
Owned 4 years
uh it's definitely a lot heavier than like a 5-ply or a 3-ply from a brand that everyone know called like all clad um it's it's a weighty cookware

because I don't really care if I get a bit of scratching in my stainless steel cookware yeah it doesn't make a difference it doesn't really make a difference you know when when you look at a nice clean piece of the mire or all Clyde for instance it's got some scratches in the surface I don't really care no
Cites scratch resistance
that 12 inch All-Clad D3 that everybody loves less than three pounds there this demire 12.6 inches well over six pounds so two and a half times heavier than that All-Clad D3

the heat distribution with these two pens it's about the same and it's always much better on the gas cooktop or on an electric top if you're you know if the hub covers the whole base of the pan but because my does not cover the whole base of the pen on both of these pans i get about a 40 to 50 degree difference um…
Cites even heating
this is uh yeah this industry this is a lightweight compared with the problem seven okay in my hand this one feels at least one point one and a half times or even twice as heavy as this on paper it's not okay on paper it's about thirty percent heavier but you know it feels twice as heavy when you pick it up like that
Cites weight
you'll see that i've done a couple of videos on these atlantis pro line seven fry pants which i have two off the 28 and the 32 centimeter models
