Um uh but you know more more than just being functional for me a knife uh being the most important tool in any cook's kitchen it needs to be something that you want to hold and something that you get pleasure out of even when you're not cutting with it. Um, so again, for at least for my needs, the Titanium Pro is my favorite because it sears nice and evenly. It sears faster. Uh, and I can use metal utensils in there.
But, in all other respects, uh the Titanium Pro, I think, comes out either equal with one of these two pans or on top, which is the reason why I got behind this company, behind our place, um and wanted to partner with them on this.
Um it's a brand new technology, and for me, it's been really been a game changer.
So, first, the Teflon style pan. Um, pretty even heating. Uh, so this is aluminum pan, which means that it should heat really well. Aluminum has really good heat distribution. You can see with Teflon just how non-reactive it is. Like that oil just kind of moves around like a melted T1000.
we can see with the Teflon style pan that there's actually pretty decent searing, relatively even all throughout.
So, this is the non-stick pan that I just seared a steak in. Clean up should be real, real easy. Just a little bit of soap and water. Not much effort at all. In fact, I can just use the uh the soft side of the sponge.
so when it comes to cleaning, nonstick is the easiest if you're going to do them by hand.
All right, so here we have them. This is our teflon pan. It seared really nicely actually. It took about 3 minutes to get this color on it. It's pretty crisp throughout. Slightly light over here, slightly darker over here, but that's a pretty good sear.
So, of the three, the titanium pro and the teflon both I think seared the best as far as salmon skin goes.
All right, I'm going to give this the old slide test here. So, without using a spatula or anything at all, I'm just going to shake the pan and see how that egg moves around. Immediate immediate release. Zero effort at all. Even just sort of the tiniest tilt sends it skittering across the surface. That is very, very…
And there we can see no sticking. Tiny bit of browning. Not the perfect omelette, but it came out of the pan really nicely, which is what we care about right now.
Um, and you can see that the edges are set, but the inside is still nice and custardy, the way an omelette should be.
Um, I reserve my Bar Keepers Friend for my stainless steel which it is the best thing. My stainless steel and my copper actually I use it but it'll um, it'll get stainless steel like completely brand new looking with a with just a little bit of scrubbing.

it creates this um much harder. It's about about two times harder than than raw carbon steel, um and also much sort of slicker. Also importantly, um much more robust. So it's not um you know, nitrided carbon steel won't rust as easily.

The process we use on this wok involves both high heat uh and high pressure in the nitrogen treatment. Um so it comes out about twice as thick as a standard nitrided steel wok.
Um, not too much of an issue with the super nitrided wok because it's not reactive the way carbon steel is, but definitely if you have if you have a raw carbon steel wok, you're going to not want to skip this step.

Um however, it has a really slick sort of non-stick surface that doesn't scratch out uh and is non-toxic.
So you can see how nice and non-stick that is. The eggs just really glide around there.
Uh, this walk you can get it, you know, you can get it to 900 degrees, 1,000°. Um, plenty of heat for searing and you're going to develop plenty of that walk.

What's special about this walk is that it is a carbon steel walk. However, if you look at the inside and you see how sort of nice and shiny, smooth that is. This walk has been used quite a few times.

There's a treatment on this called super nitride. So there is regular nitriding treatment. This super nitride treatment creates a nitride layer that's thicker about twice as thick as a normal nitride treatment layer.
And well, yeah, the nitride treatment on this is what prevents you from having to worry about all that.
So since then, I've been using well, a variety of different walks because really my goal was to work on my own. But I've been using a variety of different walks and I'm glad that I finally have a new walk that I can keep for the next 20 years, maybe give to my kids.
With the super nitride coating, you don't need to be as careful about drying it out as with cast iron, but it still helps with maintain the seasoning that way.
and what i found was that the 200 000 btu burner it took about a minute to heat the water that much but this guy which is only a 160 000 btu burner um actually only took 45 seconds to bring the water up to the same uh degree so this one is about twice as efficient um as this one is as far as um the amount of energy…

Finally, we'll look at the titanium pro. Um, ignoring the part where because of the structure of the meat, it didn't touch the pan. We can see actually there's very very even browning all the way across the board. A nice crust on the edges and even browning here all the way to here between these three.
Um, so Titanium Pro, pretty easy to clean. It doesn't wipe out quite as easily as the nonstick does, but it wipes out a great deal easier than the cast iron or carbon steel.
And the Titanium Pro almost as easy as non-stick in the sink. Um, but it is also uh completely dishwasher safe.
Finally, this is the titanium propan. It looks to be of the three, I'd say, the evenest throughout. Again, we have one of these little spots where because of the way the fish was butchered, um, part of it didn't come in direct contact with the pan, so we won't really pay attention to that. But, if you look at the…
Um, and this one cooked faster than in the Teflon style pan, 2 and a half minutes. Again, because the material of the titanium pro, the steel in there acts as a bigger thermal battery, so you have more heat to give to the salmon once it goes into the plate.
Almost too slick. So, not quite as slick as the uh the non-stick. It still takes just a tiny bit of tilting to get it to slide around, but significantly more slick than the cast iron.
It's almost too nonstick. Get that side over. That actually ended up behaving very similarly to the nonstick.
You know, I know in my experience, like this one test, it showed it sliding out of there very, very easily.
Titanium Pro, it slid out nearly as easily.
Not perfect for omelets, but still this omelette came out really nicely. In fact, I think it came out a little bit better. More custardy in the center. Real tasty.
Okay, so cast iron, very slow heat distribution. Um, there's no aluminum in there at all. Um, so because of that, we see these really distinct hot spots where the burners were. Um, so the burner is in a ring pattern, which means that we get this dark browning on the outside, but there's very little browning in the…

I can feel the center is actually a little bit paler though. Um, again, that comes down to the evenness of the heating. So, the center of that cast iron pan because of the shape of the flame uh was actually cooler than the rest of the pan.
That said, you can do it without soap. Um, it takes a little bit more effort. You see your sponge gets really greasy.
Cast iron is the most difficult. Uh, requires the most work. It does require you also to make sure that you dry carefully and rub them with oil so they don't rust or pit.
Cast iron surprisingly seems to be actually fairing, I would say, the worst. If we let it go for the same amount of time at the same heat, a full 3 minutes, um, it gets a much darker sear. So, that can be advantageous if your goal is to get a really dark crust on something like a steak or a burger without, you know,…
So, I cooked the second piece of salmon, this time for 2 and 1/2 minutes. Um, this one also still came out a little bit darker and definitely much more uneven than the Teflon style pan. Again, that's because of the uneven heating of cast iron.

if you're nervous and you're worried about spending that much money on a single pan um that you might not use, um I would say don't get that pan. Get a cheaper one.
and then when you finally feel like you, um, you know, walk cooking has made a solid improvement to your life and you might want to get something, uh, that makes that even better, then you can upgrade to the other pan, to my new pan.
But any portable gas burner um that puts out around, you know, 15,000 BTU is about the max that you can get out of a butane canister um flow um that's going to do really well for walk cooking.

I find that actually even when I had a a portable a full gas range at home, um in general, a small portable butane burner um worked better for walk cooking.
with a with a with a walk like you do want this sort of concentrated heat zone at the bottom um and progressively cooler zones going up the side. Um they're also sort of designed for for tossing and encouraging evaporation.

the the other difficult thing with induction of course is that it has things have to be induction friendly. So there has to be some kind of um steel involved in there. Something that's going to um work with that magnetic magnetic field. Um and you also generally have to have a pan that gets good contact.
the good things about induction and gas are that they're both very responsive. So, you you switch them on, you can get them up to full blast, uh, and you're, you know, you're pumping energy into that pan uh, very quickly, and you shut them off, and it instantly will cut the heat.

Um, and a pretty one too. Uh, it also um the finish on it is an aiji finish. So, it's it's hammered. Uh, and then u most of the blade is left unpolished so that uh you're going to see the sort of pits and marks from the hammer in there.
The handles are made uh from 200-year-old uh black walnut uh from a tree in McMinnville.
Uh and uh and there's a there's banding with my my my signature colors, guava pink and uh golden yolk. Um so it's just a little a little taste of color on there. Um I think it adds a lot of beauty.
Um for knife nerds out there, um it is made with uh uh sumagashi steel, 20 layers of it.
