this is two separate pieces that are bonded together that have the base and the upper shell and the marriage here is absolutely perfect
so cast doesn't absorb energy as quickly as atlantis atlantis really is amazing how fast
so using the cookware makes you a better cook so that's a big bold claim for me to to make but it just does
so that's the big big advantage of why you would spend money on atlantis and on proline is that it gives you that nice buffer things happen more slowly heat kind of moves through the pan up and down at a slower rate and you don't find all of a sudden you've gone from kind of browning to burning it just doesn't happen…

After the water boiled, I took each pan off the heat and measured the water temperature after 10 minutes. Demeyere Atlantis retained the most heat, again thanks to its super thick construction.

This pan didn’t heat as fast as the thinner pans when empty, but it boiled water quicker than all of them.

Most importantly, it was the only stainless steel pan that didn’t make any buzzing or clicking sounds during all of my testing.
The second point about warping is definitely true. This pan started completely flat and stayed that way after heating it.

That brings me to the clear winner in the stainless steel category, Demeyere Atlantis.
I will say that the quality of these pans, the quality of the metal of these pans, are obviously very high. You can just tell by looking at them and feeling them.

With both collections, Demeyere welds their handles to the pan instead of attaching them with rivets, so the cooking surface is completely smooth. Rivets tend to collect grime and become discolored, so the rivetless design makes cleaning much easier.

Secondly, it makes the cookware 30 percent more efficient on induction cooktops. Induction cooktops only work with cookware that's made of magnetic materials. Steel is magnetic and since Atlantis pans have three layers of steel on the bottom, they work faster and more efficiently on induction.
Both collections retain heat well but due to its additional layers, thickness, and sheer weight, the Atlantis collection absorbs and retains heat better than Industry.
I repeated this test with several other pans and as you can see in the results Demeyere Atlantis retained heat better than every other pan after five minutes, and they tied with Made In after 10 minutes.
Atlantis cookware is more forgiving which makes it easier to cook with Because it's thicker and retains heat better, the temperature doesn't fluctuate as much while you're cooking and adding and removing ingredients. You won't burn your food if you accidentally turn the heat too high. It heats slowly and steadily.
Its thick 7-ply construction allows it to heat evenly and retain heat better than almost any other cookware.
Another downside to Demeyere’s thick construction is that it takes a while to heat up. Compared to 19 other pans, the Demeyere Atlantis took the longest to boil two cups of water.

It's also the best performer on induction cooktops. It heats evenly with no warping or buzzing.

I mentioned that there are three stainless steel cookware brands that I recommend if money is not a factor. And the first one is Demeyere Atlantis.

I mentioned briefly that cookware in the Atlantis collection has a three-layer bottom. Demeyer calls this TriplInduc. It's only available with the Atlantis collection and it provides two benefits. First, it makes the cookware more durable and ensures that it will stay perfectly flat and never warp.

so as you spend more money on cookware stainless or cast iron the quality difference on how they cook starts to narrow to a point where these two pans that are two of the best quality pans in the world cook very very similarly they do a lot of the same sort of thing

the bottom diameter of this pan is approximately 26 cm, so that's very large. And that's too big for most ceramic and induction flat tops.

so it's really important before you buy a skillet from proline that you would try it feel it get it in your hand make sure if you buy from somebody online that you have a return policy that's really easy to deal with
so people that find cast iron is problematic for whatever reason they don't like candles they think it's dirty whatever you get the high end result of high-end cast iron from a stainless steel pan which is amazing

right here i have a demeyer pro line and this is from what they call the atlantis series this is a seven layer aluminum aluminum alloy stainless steel inside mount pan it is extraordinarily heavy for a stainless steel pan
