Second, D5 is more forgiving. If you turn the heat up too high, it takes a little longer to react. The same goes for when you turn the heat down. This may sound like a negative but it gives you some leeway while you're cooking.
This helps you avoid burning food but doesn't give you the control that you might need for certain dishes.
There are also some downsides to D5's construction. As I mentioned, it heats up slightly slower than D3.
To illustrate the difference, I poured four cups of water into both pans and turned the heat to high. The water in the D5 pan took 4 minutes and 35 seconds to reach a boil.
Another downside is that D5 is less responsive. It won't react as quickly to changes in temperature.

All three are roughly 3 mm thick with wide cooking surfaces and comfortable handles. They don't retain heat as long as the heavier pans, but they heat faster and are easier to handle.

The handle is the most polarizing of any pan I tested. It has a concave groove on top that locks the pan in place so it won't rotate. At 400 degrees, the water droplets lasted a little bit longer but still evaporated.
At 430°F, the All-Clad pan did the same thing as the Heritage Steel pan. Water droplets bounced around until they hit a spot where previous droplets fizzled out.
Instead of waiting for the pan to get hotter, I tilted it so the droplet could avoid the cooler spots. When I did that, the vapor layer persisted, and the water danced around the pan.

so that's the big big advantage of why you would spend money on atlantis and on proline is that it gives you that nice buffer things happen more slowly heat kind of moves through the pan up and down at a slower rate and you don't find all of a sudden you've gone from kind of browning to burning it just doesn't happen…

so it's really important before you buy a skillet from proline that you would try it feel it get it in your hand make sure if you buy from somebody online that you have a return policy that's really easy to deal with
