De Buyer carbon steel pan
I love Dubai also for mineral B you know I am heavily biased I will always tell people if this is a pan to buy without question uh one of the two Brands made of France I love them
These pans are forever pans. These will last your the rest of your life, your children's and your grandchildren's because I can testify to that since I own my grandmother's crepe pan.

one of the things that I love about these pans is, I mean, these are steel. These are just a solid hunk of steel. This is what we used to make armor out of. So, you know, you can't destroy them. You don't have to use special soft implements. You can use steel um spatulas. Doesn't really matter cuz these will take…
de Buyer Mineral B Pro had the best heat retention of the group and a comfortable stainless steel handle.

by comparison to say a multi-layer stainless steel pan, those go in the, you know, hundreds of dollars for a quality stainless steel with layering in it to distribute the heat. So that I find that they're a very good value proposition.
Um, and these just are at a a lower price point. They're about 30% lower price point.
a great value. And whatever you buy in this line is going to last you your whole life, your children's lives, whatever. It's a real great investment.
is sort of that perfect balance between value and a great pan.
de Buyer Mineral B Pro is heavier and heats slower than Strata, but it didn't warp, made minimal noise, and retained heat longer than any other carbon steel pan I tested.

the buyer mineral B is my favorite pan so for those of you that want a straight up answer to which one I personally like more there you have it the video is over the mineral B wins
he decided to give the buyer a try and instantly understood what I meant even with the seasoning process I think
I think in my head I'm thinking this pan is going to work a lot like my favorite mineral B duboet pan
Because of this, you can't use this pan for roasting or broiling, and you can't season it in the oven.

had achieved some browning, we were able to just pick them up and flip them over. Nothing stuck to the pan whatsoever. So that was impressive. Even with just an initial seasoning, they released absolutely beautiful.
And we did grilled cheese and spelt like cheese into the pans and, you know, sort of cooked on um cheddar and griier cheese just popped right off the pan, no problem.
So that's our impression of the overall choice of lineups in the Duboet carbon steel pans. They all cook absolutely beautifully.
They release food once it's once you've got a sear on. It releases perfectly. and they are an absolute joy to cook with.
you can get it hot very, very quickly, sear your meats or your fish or chicken, whatever it is you want to do, and then if you want to continue cooking or make a sauce or do something like that, you can reduce the heat and the temperature in the pan drops very quickly.

But it was absolutely no problem. I just took a little bit of oil on a on a rag, wiped it into the pan, heated the pan up on the stove again, got it smoking, and it came right back to a nice brown seasoned coat.
And that allows you to put these pans in the oven or under the broiler. If you want to finish, say you're cooking a filt of fish and you want to finish it under a broiler, you can stick these under there. No problem.
I like the versatility of being able to start thing on a something on a stove top and finish it in the oven without having to worry about the temperature or the time.

both pans have zero issues there's no warping although that has a lot to do more with improper use or user error the rivets are sturdy the handles are perfect with no signs of giving out and the seasoning has been great they really have treated me really really good for the last five ten years or so

the buyer was going to be more of a personal everyday Pan
I've had no issues at all since I've done that and it works just like the mat for in the oven or the broiler now
with the the buyer I feel it's similar enough to cast iron that it's totally replaced cast iron for me
if I didn't own the buyer and only had the mat for I would still feel the need to own a cast iron pan but if it was the other way around the buyer would fill in that cast iron need for me
I've got an 11in mineral B duboet. Tremendous pan to compare.

the the buyer was a lot easier to season for some reason in my opinion
that's where I personally stand that the buyer is heavier and it has some of that weight and density to it even now compared to the larger mat for 12 inch plus Pan
the buyers still really Hefty but it's still lighter than an equivalent cast iron pan with the same size
this pan can be used for anything it's completely oven safe and Broiler safe unlike the buyer mineral B with that stupid coating on the handle
