Since industry pans are thinner, they heat faster but the temperature fluctuates quicker when you turn the knob or add ingredients. So you have to monitor your cooking more closely to make sure you don't overcook or burn something.

With both collections, Demeyere welds their handles to the pan instead of attaching them with rivets, so the cooking surface is completely smooth. Rivets tend to collect grime and become discolored, so the rivetless design makes cleaning much easier.

Lastly, pans in the Atlantis and Industry collections are rivetless, which means the cooking surface is uninterrupted and easy to clean. Instead of rivets, the handles are welded to the sides. Rivets collect grease and are difficult to keep clean over time, so this is a major benefit.

At 275 degrees, it evaporated much quicker but it still wasn't ready.
The same thing happened as I tested it all the way up to 390 degrees.
At 400 degrees, the water balled up briefly at the center of the pan but evaporated when it flowed to the sides.
This continued at 410 and 417, although the water balls lasted slightly longer as the pan got hotter.
At 430 degrees I noticed something interesting. When I dropped the water in the pan, it bounced around until it landed on a spot where water previously evaporated.
Finally, the Leidenfrost Effect was fully achieved when the pan reached 450 degrees Fahrenheit at the center.
