Le Creuset Braiser
our winning brazer also by la cruz a this is three and a half quarts
And our favorite of the five was this blue guy right here. This is the Le Creuset signature enamored cast iron, round braiser, three and a half quarts.
because i feel a bit uncomfortable you know stirring with a spatula or whatever i just feel like food is going to fall out over the side
Cites build quality (against), lid (against), shape and form (against), weight (against)
the weight and the thickness of this lid is extremely substantial so the total the total weight of this entire vessel this entire pen is 5.6 or let's say approximately 5.6 i waited on my scale and 2.5 of that is on the lid this is very thick and it's very heavy and it's much much thicker and heavier than this
they could they could have made this a bit thicker or a bit bigger and given us a heavier body and a in a slightly less heavy or lighter lid so that i found that a little bit strange as well
i mean you wouldn't even make soup in this the shape is just not right
Cites shape and form (against), size and capacity (against)
the only reason for that or the obvious reason for that is that everything you can do in the brazer rather you can do in the dutch oven but not vice versa you can't do everything that you can do here in a bracer
Cites lid (against), shape and form (against), size and capacity (against), versatility (against)
so firstly for a 30 centimeter diameter i was really hoping the cooking surface the flat usable cooking surface would be a bit bigger
in my opinion it would have been a bit better if they reduce the tapering here on the sides and you know and so then they could give us a little bit more surface on the bottom
the second point is that i find this pen a little bit too shallow that's going to sound like a double standard because obviously it's not a dark oven it's not meant to be tall like a dutch oven but nevertheless i do find it a bit too to do shallow
this lid is a very tall lid for the type of pan so i mean they could have made the lid a little bit less tall and put some extra height on the pan
i cannot i cannot say in good conscience that this is more practical than this because this is better in terms of volume and this is also better in terms of the amount of cooking surface that it gives you
do you need both my answer is no um again i would have loved to be able to say yes but purely from a practical point of view i would say no
this is gonna be a great serving dish if you had a dinner party you know you cook a roast roast chicken roast beef whatever it is you make and you serve it right out of this piece and that's going to be a pretty great conversation starter i think and your guests should be impressed
Cites appearance
i love that it has two handles it just makes it so easy to just pour it into a little wall and drain it out versus having to kind of like struggle with you know one handled skillet and whatnot
Cites handle
so we did test five razors and the lakers day ended up being our favorite for a variety of reasons including the fact it has really large looped handles which make it easy to lift in and out of the oven and maneuver around the stove top
Cites handle
the other reason that I really like the brazers and that I think that if you're going to get one or the other maybe a brazer might be a good choice is because you can also sort of use it as a sauté pan or a pan on your stove top if you ever want to use you know a little cast IR in enamel pan so that's pretty exciting…
Cites searing and crust
before i answer the question let's just take a second to talk about how nice this thing looks
Cites appearance
it's still a beautiful vessel and i would use it as much as i can don't get me wrong
and once again you get a bigger bottom cooking surface let's just measure that so here you get about 26 centimeters of cooking surface and you get a lot more depth
Cites size and capacity
my second choice over the stove as i've already shown you is a 30 centimeter licorice low casserole
but of course if you don't need a vessel in that size this is still going to be a good good choice
this is our recipe for weeknight roast chicken it's super easy you just preheat the pan drop this chicken in and that gets the dark meat cooking at the same rate as the light meat and it's done so fast it's like an hour and it's also pretty beautiful
Cites even heating
it has a light colored cast iron enameled interior which is great for monitoring browning
Cites heat retention, surface finish
this thing performed beautifully same as it does in a dutch oven
the cast iron brazer is really great just like a caster and skillet in the sense that the heavy cast iron is going to maintain the heat when you add food to hot oil it cools down the oil and you're not going to get that beautiful crispness that you want
okay so we shallow fried our breaded chicken cutlets in our winner the la crosse beautiful just as good as the skillet
this recipe really has all the components that i wanted to test out in the razor it's browning it's simmering it goes in the oven for a while so it was ideal for this testing
Cites versatility
It had nice generous handles, it's a terrific pan, cheap it wasn't at about $300.

I think that honestly having one of each just because they're used for such different types of cooking is really a smart choice
you can easily fit two of these little guys inside of your oven one on top of the other on two different racks if you're trying to do two of the same food or you know you have a large party

but skillets you can get covers for them but are usually open vessels this has really got a lid it will hold down all that kale
