because i feel a bit uncomfortable you know stirring with a spatula or whatever i just feel like food is going to fall out over the side

handling owns one Le Creuset Dutch Oven and Braiser Do You Need Both?

Cites build quality (against), lid (against), shape and form (against), weight (against)

the weight and the thickness of this lid is extremely substantial so the total the total weight of this entire vessel this entire pen is 5.6 or let's say approximately 5.6 i waited on my scale and 2.5 of that is on the lid this is very thick and it's very heavy and it's much much thicker and heavier than this
they could they could have made this a bit thicker or a bit bigger and given us a heavier body and a in a slightly less heavy or lighter lid so that i found that a little bit strange as well
1:00 objects MQ Cookware Reviewer
the only reason for that or the obvious reason for that is that everything you can do in the brazer rather you can do in the dutch oven but not vice versa you can't do everything that you can do here in a bracer

performance owns one Le Creuset Dutch Oven and Braiser Do You Need Both?

Cites lid (against), shape and form (against), size and capacity (against), versatility (against)

so firstly for a 30 centimeter diameter i was really hoping the cooking surface the flat usable cooking surface would be a bit bigger
in my opinion it would have been a bit better if they reduce the tapering here on the sides and you know and so then they could give us a little bit more surface on the bottom
the second point is that i find this pen a little bit too shallow that's going to sound like a double standard because obviously it's not a dark oven it's not meant to be tall like a dutch oven but nevertheless i do find it a bit too to do shallow
this lid is a very tall lid for the type of pan so i mean they could have made the lid a little bit less tall and put some extra height on the pan
i cannot i cannot say in good conscience that this is more practical than this because this is better in terms of volume and this is also better in terms of the amount of cooking surface that it gives you

this is gonna be a great serving dish if you had a dinner party you know you cook a roast roast chicken roast beef whatever it is you make and you serve it right out of this piece and that's going to be a pretty great conversation starter i think and your guests should be impressed

the other reason that I really like the brazers and that I think that if you're going to get one or the other maybe a brazer might be a good choice is because you can also sort of use it as a sauté pan or a pan on your stove top if you ever want to use you know a little cast IR in enamel pan so that's pretty exciting…

it has a light colored cast iron enameled interior which is great for monitoring browning

performance tested it Gear Heads | What is a Braiser and Why Does it Deserve a Place in My Kitchen?

Cites heat retention, surface finish

this thing performed beautifully same as it does in a dutch oven
the cast iron brazer is really great just like a caster and skillet in the sense that the heavy cast iron is going to maintain the heat when you add food to hot oil it cools down the oil and you're not going to get that beautiful crispness that you want
okay so we shallow fried our breaded chicken cutlets in our winner the la crosse beautiful just as good as the skillet

I think that honestly having one of each just because they're used for such different types of cooking is really a smart choice

do i recommend this pen would i would i tell you to go out and spend 200 euros on this pen well probably not uh and um or in other words it's it's it's not my it's not my first choice

so overall my impressions with the soap it's well it's yeah i'm a little bit underwhelmed um i i would like to try it stop dutch oven the proper dutch oven uh it's just with this particular model i think there are better alternatives out there

Cites even heating (against), lid (against), safety (against), surface finish (against)

dislike about the pen well there are a couple of things now the first dislike is this lid no i think this lid is too small um when you put the lid on the pan it's exactly the same diameter as the pen itself which means if you move the lid like this sideways you can actually see a gap between the lid and the edge of…
now the second problem which is even bigger problem i think is the lid it doesn't fit that securely on the pan okay so i'll show you what i mean if you till the pan and if you're just a little bit rough the lid can easily slide off well it's not happening now but if you just give it a little push the lid easily slides…
now the second dislike with this pen is well i mean it's a design choice by stove but i'm not a fan of the black interior okay so i prefer i prefer to have a light colored interior light by like crossing so that i can see the browning or the progress of my cooking easier than the black interior
3:01 notes MQ Cookware Reviewer
the temperature difference between the edge and the center of the necrosite is a little bit smaller than the stove but not significantly so so i wouldn't really worry about that on average 10 degrees or so

performance tested it Staub Cast Iron Braiser - A Look and Impressions, Comparison with Le Creuset

Cites even heating

if we look at these last three rows uh the temperature diff of the liquid side between the center and the edge um they definitely converge better than the stove okay but again it's not really a significant difference it's not significant significant enough for me to say
so first of all in terms of cooking you are not really going not going to notice the difference okay so getting a soap and a licorice i think they are both going to work really well for you

Cites aeration, browning visibility, lid, searing and crust, size and capacity

the base of the pan is large enough to easily accommodate both pieces of chicken
the nice heavy lid creates a beautiful seal during the Browning process
look at the great color we're able to get from that pan
we got great color on the mushrooms
the Dome lid means there's extra space for all the ingredients we have in there and also room for air to circulate during the brazing process

but for smaller roasts things that accommodate about four people a breezer works perfectly

use-case fit uses it professionally, daily Gear Heads | What is a Braiser and Why Does it Deserve a Place in My Kitchen?

Cites shape and form, size and capacity, versatility

because the brazer's sides are less sloped outward and they're more straight up and they're also a bit higher for something that has a large amount like this steam kale recipe the braiser is actually a better choice than a skillet
we did really like braziers we found them to be versatile in their own right almost like a swiss army knife of cookware
1:00 supports
but a bracer is also great because while its walls are smaller it has a really large cooking surface

performance uses it professionally, daily Gear Heads | What is a Braiser and Why Does it Deserve a Place in My Kitchen?

Cites flavour impact, shape and form

so it can kind of accommodate a lot of browning here and it's spread out more a little i mean when you look at end to end here versus here this is lower and wider than your dutch oven so you're really going to get more surface area exposure which helps things evaporate and concentrate the flavor

We tested five different braisers here, they were all about the three and a half quarts which we think is a good size to cook for four people.

use-case fit tested it Equipment Expert's Favorite Braisers

Cites size and capacity, versatility

They're a little bit Dutch oven, they're a little bit skillet because they're low and you can shallow fry in them or saute in them. They're also a little bit roasting dish because you can roast chickens in them. Or they're like casserole dishes, they're all pretty enough to go from the oven to the table. So you can…
Our testers use them to braise chicken thighs, make meatballs, braise string beans, make pork ragu and to roast those five pound chickens, and each one fit them.
